Indication
Alfalfa is a herbaceous plant of the Fabaceae (legumes) family, which can reach 30 to 80 cm in height.
This plant species is native to the temperate regions of the Near East and Central Asia.
Thanks to its richness in proteins, vitamins and minerals (calcium, iron, phosphorus, selenium, zinc), alfalfa is recommended in case of severe fatigue, exhaustion, lack of iron or loss of energy.
It constitutes a good general stimulant of the organism.

Use
Organic alfalfa sprout seeds can be eaten either:
- in raw shoots of 2 to 3 cm; the base of the shoots should be white and the tips green.
- as an accompaniment to your salads, burgers, tacos or sandwiches.
- in an omelet or soup (at the end of cooking).
- with shrimps or in a white cheese and fine herb sauce to spread on mini pancakes.

Special precautions
Warning: the consumption of alfalfa is contraindicated for people who have had systemic lupus erythematosus.
This contains L-canavanine, an amino acid (found mainly in legumes and their seeds) which may help to worsen the symptoms of the disease.
